グランドメニューのスカンピ（手長エビ）を使ったパスタ。
主人が学芸大学のイタリアンのお店で料理長をやっていたころからの人気メニューです。
手長エビとトマトのリングイネ
去年7月、オーノ・ブォーノをオープンして、学芸大学のお店のころお世話になった常連さんたちが駆けつけてくださり、
「これが食べたかったのよ～！」
と、声を揃えてオーダーしてくださった根強い人気の手長海老を使ったパスタです。
主人が学芸大学のイタリアンのお店を退職し、オーノ・ブォーノをオープンするまで2年ちょっと空いたため、お客さまたちはその期間ずっと食べられなくて心待ちにしてくださっていたとのこと。
魚介のだしがとっても良くきいていて、特に手長エビの甘みのある旨味がリングイネに絡み合って本当に美味！！
このパスタをスパゲッティーニではなくリングイネでいただく理由が実感できる、そんなパスタです。
トマトソースではなくフレッシュトマトを使って、さっぱりオイル×塩風味のお味で、おいしいおいしい・・と味わって食べていると、ペロッと2人前くらい食べちゃいそうな、そんなおいしさなんです。
スカンピは他のエビに比べて身は小さめですが、それでもぎっしりとおいしい身がつまっていて大満足(^-^)
さすがのビール党の私も、これはやっぱり白ワインだよね！って思います。
スカンピの身をおいしく味わいながら白ワイン・・最高です☆
暑くなってきてさっぱりした感じのパスタな気分な時期、と～ってもおすすめです。
