大野 裕典 （おおの ひろのり）
母の影響で料理に興味を持ち始め、高校卒業後から日本料理を1年半、その後調理師免許を取得しイタリア料理の道へすすみ、24歳で料理長の職につきました。
その後、いくつかの店舗にて様々な経験をさせていただいた中で、イタリアと日本の食べ物に対する考えや地理的な共通性、地方料理の集合体であることに興味を持ち、このイタリアと日本の料理をうまく融合させ、日本の食材・調味料を用い、素材を活かした両国の郷土料理を新しい表現として広め、お客様においしく楽しんでいただきたいと考えています。
料理はできるだけシンプルかつリーズナブルに、地の野菜や新鮮で安全な魚介・肉を調理し、お客様にわかりやすくおいしく提供できることを一番に考え、イタリアと日本の郷土料理性に目を向けた特徴をいかした料理を楽しんでいただけるよう考えております。
